How easy is it to take out the original stereo to put another much better head unit in

Depends on what you've bought to replace it, the tools available and your knowledge/experience.
There's nothing special about C-Max HUs - same as any other car.

haven't bought anything yet, just wondered how easy it was to take out as the original stereo is a bit crap

If its not a double din radio which is the larger style then Halfords do a replacement plastic unit that converts the large hole left over down to a single slot for the radio and a storage slot underneath it. If you want to still use the stearing column joystick then you need to get converter connections. Halfords supply all these connectors and will remove and fit your new radio for you. Its very quick and not to costly. Just for your reference fords sell the upgraded Sony radio for no less than 600 which is a rip off considering you can buy one of those dvd sat nav tv screen jobies.
